Vinification

The maceration and the alcoholic fermentation take place in big oak vats (150 HL) for a period of 20 days. The fermentation is carried out only with indigenous yeasts.

Refining

The aging takes place in big oak barrels (from Krasnodar), under controlled conditions of humidity and temperature, optimal for wine ennobling.
The malolactic fermentation occurs during the aging in the big oak barrels.

Tasting Notes

Visual: Clear, dark ruby red, bright with purple reflections.

Smell: intense, complex forest berries flavors (cherries, blackberries and blueberries) and liquorice.

Taste: consistent, balanced, with soft tannins, shades vanilla and dark chocolate, with pre-long post-taste, delicate.
